Bini Owo (Tomato-Based Palm-Oil Soup)
A thick tomato, smoked-fish and palm-oil soup, traditionally finished with a small amount of culinary potash. Bini Owo can resemble a tomato stew at first glance, but its palm-oil finish gives it a different texture and character. Omolabake records learning the Bini method after making the Urhobo version, and a Benin-based Cookpad author explicitly contrasts the two. Tomatoes are central here, rather than an incidental addition to Delta Owo. The sauce is commonly paired with boiled yam or unripe plantain. Recording both preparations separately preserves a regional distinction that the shared name alone can easily obscure. Cultural context: The tomato-based Bini preparation is kept distinct from Delta Owo. Ingredient proportions vary across published home recipes.

Allow 10 additional minutes for resting / soaking. Total: 75 minutes.
What you’ll need
Let’s get cooking
- 1
Blend tomatoes, onion and pepper with 150 ml water. Pour into a heavy saucepan and simmer for 15–20 minutes, stirring often, until reduced and no longer raw-tasting.
- 2
Add fish, prawns, crayfish and optional stock cube. Simmer 8–10 minutes. If it is sticking, add a little of the remaining water rather than scorching the base.
- 3
Dissolve culinary potash in 30 ml warm water in a separate cup. Let any insoluble material settle. Add the clear liquid gradually to the simmering sauce, leaving sediment behind, and stir for 2 minutes. Do not exceed the ingredient quantity or the product’s directions.
- 4
Take the pot off the heat and allow 10 minutes for it to cool slightly. Stir in the palm oil a little at a time until uniformly combined.
- 5
Return to gentle heat for 5 minutes, stirring without a fierce boil. Taste before adding salt. Serve with boiled yam or unripe plantain prepared separately.
A little kitchen wisdom
Use only a food-labelled culinary product. If its identity or directions are unclear, postpone the recipe rather than substituting caustic chemicals. Avoid overheating after the palm-oil finish, which can separate the sauce. Timing estimate: active preparation 25 min; cooking 40 min; additional passive time 10 min; conservative planning allowance 75 min. Some stages may overlap. Recipe status: Research formulation; not kitchen-tested. Allergen checks: Fish; Crustaceans; Check stock cube label
