Ofe Achara with Akpuruakpu Egusi
Tender achara shoots and okazi in a fish-rich soup with firm, seasoned egusi discs. Achara soup draws attention to texture: tender shoots, finely cut okazi and egusi molded firmly enough to remain a separate bite. Obiamaka Angela Udevi records it as a ceremonial food in Umuahia and Isiala Ngwa, while Flo Chinyere documents regional names for the molded seeds. The work of forming the discs is central to this version. Its character should survive the cooking, so the finished soup carries both a thickened broth and recognizable pieces of akpuruakpu, rather than an undifferentiated melon paste. Cultural context: Sources associate the soup with Umuahia and Isiala Ngwa. Achara here means the edible tender shoots sold for soup, not bamboo or sugar cane.

What you’ll need
Let’s get cooking
- 1
Simmer stockfish with the stock cube and 1 litre water until tender, usually 30–45 minutes. Keep enough liquid around it and reserve 150 ml of the warm stock.
- 2
Mix 220 g egusi with usu, half the crayfish, half the ogiri, dried chilli and a pinch of salt. Knead in reserved stock a spoonful at a time until firm and moldable; do not automatically use it all. Shape into small discs about 3 cm across and 1 cm thick.
- 3
Bring 500 ml water to a gentle boil in a second pan. Lower in the discs and cook for 10 minutes, turning carefully. Keep their cooking water.
- 4
Add smoked fish, fresh pepper and remaining crayfish and ogiri to the stockfish pot. Simmer 5 minutes, then lift out the fish. Stir the remaining egusi into the broth and simmer 20 minutes, scraping the base and adding disc-cooking water to prevent scorching.
- 5
Stir in palm oil and cook 5 minutes. Fold in the fish, egusi discs, achara and okazi. Simmer 5–8 minutes until the shoots are tender but retain a bite. Season and serve hot with akpu or eba.
A little kitchen wisdom
Do not substitute wild grass, bamboo, lemongrass or sugar cane for culinary achara. Do not make a botanical identification from the name usu alone; buy a food product from a reliable specialist seller. Start with ready-softened stockfish. If yours is sold dry, arrange the product-specific preparation in advance; the stated time starts after that step. Timing estimate: active preparation 40 min; cooking 95 min; additional passive time 0 min; conservative planning allowance 135 min. Some stages may overlap. Recipe status: Research formulation; not kitchen-tested. Allergen checks: Fish; Crustaceans; Melon seed; Check stock-cube and fermented-seasoning labels
