A thick egusi soup with tender beef, dried fish and bitterleaf, cooked without a fried pepper base.
Egusi belongs to many Nigerian kitchens, and the sequence of cooking can matter as much as the ingredient list. Flo Chinyere distinguishes a caking method, in which ground seeds cook in stock before palm oil is added, from fried egusi and firm molded egusi dumplings. Igbo recipe documentation also records bitterleaf among its greens. This pot follows that bitterleaf route, leaving the leaves pleasantly assertive and the melon seeds softly granular. It represents a documented preparation, rather than one formula for every household in Abia.
Cultural context: An Igbo-context egusi preparation using bitterleaf and the seed-before-oil method; NICO does not define a unique Abia formula.
Put beef, stockfish, stock cube and 1 litre water in a heavy pot. Bring to a boil, then simmer covered for 50–70 minutes, adding water if the pot approaches dryness, until the beef and fish are tender.
2
Add smoked fish, crayfish and chilli; simmer for 5 minutes. Lift the meat and fish into a covered bowl. Adjust the broth in the pot to about 1 litre with the remaining measured water.
3
Stir in egusi and optional ogiri. Cook gently for 25–30 minutes, scraping the bottom frequently. The seeds will swell and form soft clusters; thin with small splashes of hot water whenever sticking threatens.
4
Add palm oil and prepared bitterleaf. Simmer for 7–10 minutes until the oil is well incorporated and the leaves are hot and softened.
5
Return the meat and fish and simmer for 5 minutes. Adjust salt and consistency: the soup should fall slowly from a spoon. Rest 5 minutes before serving with a separately prepared swallow.
A little kitchen wisdom
Use culinary egusi, not sweet watermelon seeds.
Buy washed bitterleaf if available; the amount of residual bitterness is a household preference.
Start with ready-softened stockfish. If yours is sold dry, arrange the product-specific preparation in advance; the stated time starts after that step.
Timing estimate: active preparation 25 min; cooking 125 min; additional passive time 5 min; conservative planning allowance 155 min. Some stages may overlap.
Recipe status: Research formulation; not kitchen-tested.
Allergen checks: Fish; Crustaceans; Melon seed; Check stock cube and fermented-seasoning labels
