Delta Owo Soup
A smooth golden palm-oil soup with tender meat, smoked fish and a little garri for body. Owo illustrates how neighbouring kitchens share a dish without making it identically. Bawo, an Itsekiri and Ilaje food writer, remembers her mother preparing it for special occasions. Other Nigerian cooks document differences in thickeners and tomatoes. This recipe identifies its tomato-free Delta style rather than presenting one universal formula. Cultural context: This is a garri-thickened, tomato-free Delta version. Owo also appears in Edo and other neighbouring cuisines, with substantial household differences.

What you’ll need
Let’s get cooking
- 1
Simmer the beef with the stock cube and 900 ml water for 50–65 minutes until tender.
- 2
Soak garri in the remaining 300 ml water. Separately dissolve the labelled culinary potash in 60 ml water; let any grit settle and carefully strain off the clear liquid.
- 3
Add fish, crayfish and pepper to the beef and simmer 8 minutes. Stir some hot broth into the soaked garri, then gradually stir it back into the pot.
- 4
Cook gently 10 minutes, stirring to break up lumps. In a bowl, beat the clear potash solution into the palm oil a little at a time until the oil thickens and lightens.
- 5
Stir that mixture into the soup. Keep the pot uncovered and simmer 10–15 minutes, stirring often, until the garri has fully softened and foaming subsides.
- 6
Adjust the salt cautiously. Serve with starch, boiled yam or plantain.
A little kitchen wisdom
Use only food-grade culinary potash sold for food, never caustic soda, drain cleaner, laundry chemicals or homemade ash solutions. A deep uncovered pot leaves room for foaming. Timing: active preparation 20 min; cooking 95 min; additional passive time 0 min; conservative planning allowance 115 min. Some stages may overlap. Recipe status: Research draft; not kitchen-tested. Allergens and checks: Fish; Crustaceans (crayfish); Check stock cube label
