A meat-and-fish soup thickened with prepared akparata powder and finished with oha and uziza.
Akparata gives this soup its name even when oha is the most visible leaf in the bowl. Ganiru of The Pretend Chef distinguishes it from her cocoyam-thickened oha soup, while Njideka Agbo describes the thickener in Enugu cooking. The powder is first dispersed in palm oil, then stirred into broth to build body without lumps. This preserves a meaningful difference within the larger family of Igbo leaf soups. It also avoids pretending that every soup containing oha must use the same thickener or seasonings.

Let’s get cooking
1
Simmer beef and softened stockfish with stock cube, half the salt and 1 litre water for 55–75 minutes, until tender. Add water to keep the contents from drying.
2
Add smoked fish and chilli. Adjust the pot to a loose soup consistency with the remaining water and simmer 5 minutes.
3
In a small bowl, stir akparata powder into palm oil until no dry clumps remain. Stir this mixture gradually into the simmering stock.
4
Cook gently for 10 minutes, stirring the bottom frequently. Add crayfish and uziza and simmer 3–5 minutes. If the soup becomes too thick, add hot water a little at a time.
5
Fold in oha and cook 2–3 minutes, until just wilted. Taste for salt. Serve hot with a separately prepared swallow; the soup will thicken further as it stands.
A little kitchen wisdom
Use processed culinary powder only. Do not grind whole unknown mahogany seeds or include their shells.
Akparata, achi, ukpo and ofor are different thickeners; they are not interchangeable names.
Start with ready-softened stockfish. If yours is sold dry, arrange the product-specific preparation in advance; the stated time starts after that step.
Timing estimate: active preparation 25 min; cooking 100 min; additional passive time 0 min; conservative planning allowance 125 min. Some stages may overlap.
