Recipe
Oto (Abiriba Water-Yam Pottage)
Small scoops of grated water yam cooked in a palm-oil broth with beef, fish and crayfish. Oto is recorded in Abiriba food writing as a water-yam dish whose grated paste goes straight into the pot. That detail separates it from leaf-wrapped ekpang nkukwo, even though the two are often discussed together. Rebecca Orji documents it as part of Abiriba food heritage, and Urenna Ukiwe describes the same scoop-and-simmer method. As the yam cooks, the liquid gains body around the soft dumplings. Keeping the early stirring gentle preserves that contrast between individual pieces and the sauce that holds them. Cultural context: This is the documented Abiriba grated-water-yam preparation. Similar names elsewhere do not imply identical dishes.

What you’ll need
Let’s get cooking
- 1
Simmer beef with onion, stock cube, half the salt and 800 ml water for 45–60 minutes, until tender. Add prepared stockfish during the last 15 minutes.
- 2
While the stock cooks, rinse peeled yam and grate finely to a cohesive paste. Use gloves if raw yam irritates your hands; keep fingers clear of the grater.
- 3
Add palm oil, pepper, crayfish and prawns to the meat pot. Add enough of the remaining water for a loose broth, then simmer 5 minutes.
- 4
Drop tablespoon-sized portions of yam paste around the pot, leaving gaps between them. Keep at a gentle simmer, covered, for 15 minutes without stirring vigorously.
- 5
Lift and fold carefully from the bottom. Cook a further 5–10 minutes until a split dumpling has a uniformly cooked centre with no chalky raw paste. The sauce should thicken around the dumplings; add hot water if the bottom is drying.
- 6
Add scent leaves, simmer 2 minutes and adjust salt. Serve as a pottage while hot.
A little kitchen wisdom
Ordinary white yam does not reproduce the binding behaviour of grated water yam. The ambiguous phrase Agworo Agwo in NICO is not treated as another name for Oto. Start with ready-softened stockfish. If yours is sold dry, arrange the product-specific preparation in advance; the stated time starts after that step. Timing estimate: active preparation 30 min; cooking 95 min; additional passive time 0 min; conservative planning allowance 125 min. Some stages may overlap. Recipe status: Research formulation; not kitchen-tested. Allergen checks: Fish; Crustaceans; Check stock cube label
