Kekefia (Unripe Plantain Pottage)
Unripe plantain simmered with smoked fish, crayfish, palm oil and scent leaves. Unripe plantain gives Kekefia its starchy body and restrained sweetness. Ijaw food research in Bayelsa records the pottage as Kekefiyai, while Nigerian recipe writing also uses Kekefia. Ozoz Sokoh recalls learning to enjoy scent leaf in the dish in Port Harcourt, showing how its appeal extends beyond one state heading. This version keeps soft plantain pieces in a thick sauce with fish and a late addition of leaves. It does not fold the separate, poorly documented word Soun into the recipe by guesswork. Cultural context: Ijaw/Bayelsa sources record Kekefiyai as unripe-plantain pottage. The spelling Kekefieye is a probable NICO rendering; the combined labels with Nsala or Soun are not treated as one verified recipe.

What you’ll need
Let’s get cooking
- 1
Put plantain, onion and 700 ml water in a heavy saucepan. Bring to a boil, reduce the heat and simmer covered for 12–15 minutes.
- 2
Add smoked fish, pepper, crayfish and optional stock cube. Simmer another 10–15 minutes until the plantain is completely tender. Add some remaining water if the pan starts drying.
- 3
Stir in palm oil and optional cooked periwinkles. Mash a few plantain pieces against the pan to thicken the sauce, leaving most pieces intact.
- 4
Cook 5–7 minutes, stirring the bottom carefully. Add scent leaves for the final 2–3 minutes and ensure the periwinkles are thoroughly reheated; follow their pack instructions if longer.
- 5
Taste for salt and serve hot. The pottage should be thick enough to spoon, with no hard plantain centres.
A little kitchen wisdom
Use green plantain for this documented version; ripe plantain makes a sweeter dish. Shell-free, commercially prepared periwinkles avoid home shell-cleaning instructions. Timing estimate: active preparation 25 min; cooking 40 min; additional passive time 0 min; conservative planning allowance 65 min. Some stages may overlap. Recipe status: Research formulation; not kitchen-tested. Allergen checks: Fish; Crustaceans; Molluscs if periwinkles are used; Check stock cube label
