A simple fonio-flour swallow worked into a soft mound for serving with soup.
Acha can be cooked into loose grains, a spoonable porridge or a swallow, so the word alone does not identify a finished dish. Nigerian food research describes tuwo acha as flour or grain stirred into water and cooked into a mouldable dough. The distinction matters in a collection that already has gwate acha: this is the plain accompaniment, while gwate is a seasoned pottage. Its short ingredient list lets the chosen soup define the rest of the meal.
Cultural context: Fonio swallow is independently documented in Nigerian food research and food writing; it is not the vegetable pottage gwate acha.

Let’s get cooking
1
Bring 700 ml water to a boil in a heavy saucepan. Keep the remaining 200 ml hot in another vessel.
2
Lower heat to medium-low. Sprinkle fonio flour into the water in small additions, stirring continuously with a whisk at first to prevent lumps.
3
When too thick for a whisk, change to a sturdy spoon. Fold and press against the sides for 8–10 minutes, adding reserved hot water by the tablespoon if it becomes too stiff before cooking through.
4
Cover and steam on the lowest heat for 5 minutes. Uncover and beat again until the dough is smooth and no dry or gritty pockets remain. Add a splash of hot water and cook longer if necessary.
5
Scoop into dampened bowls with a wet spoon and shape into mounds. Serve warm with soup; keep covered briefly if waiting so the surface stays soft.
A little kitchen wisdom
Use fonio flour, not whole-grain cooking directions; water needs vary with milling
No additional starch or potash is necessary
Cool leftovers quickly and refrigerate rather than keeping cereal dough at room temperature
Timing estimate: active preparation 5 min; cooking 25 min; additional passive time 0 min; conservative planning allowance 30 min. Some stages may overlap.
