Akpu / Cassava Fufu (Processed-Flour Method)
A smooth cassava swallow for soup, prepared from food-grade fermented cassava fufu flour. Cassava fufu is particularly associated with Igbo meals such as bitterleaf and oha soup, while related preparations are eaten more widely. Flo Chinyere records the names akpu, loi loi and Santana and describes older pounding methods. Ready-to-cook flour offers another route to the same place at the meal, although aroma and texture vary by product. Cultural context: Akpu is an Igbo name for cassava fufu. This is an explicitly modern, commercially processed-flour adaptation of the fermented-cassava preparation, not a home-fermentation guide.

Let’s get cooking
- 1
Read the flour packet first: follow its water ratio and minimum cooking time if they differ. For this working ratio, mix the flour with 800 ml cool water in a heavy saucepan until evenly moistened.
- 2
Heat gently while stirring, scraping the base and pressing out lumps. As the mixture thickens, switch to a strong spoon and repeatedly fold the outside into the centre.
- 3
Cook for approximately 15–20 minutes, or the packet time if longer. Add reserved hot water a little at a time if too stiff to turn. Keep heating after additions until the dough is smooth, elastic and evenly cooked, with no dry pockets.
- 4
Spoon into four warm bowls and serve immediately with soup.
A little kitchen wisdom
Commercial fufu flours differ; this water quantity is a starting point rather than a universal brand formula. Never judge cassava detoxification by taste, smell or colour. This recipe depends on properly processed food-grade flour. Timing: active preparation 5 min; cooking 20 min; additional passive time 0 min; conservative planning allowance 25 min. Some stages may overlap. Recipe status: Research draft; not kitchen-tested. Allergens and checks: No major allergens intentionally included; check flour blends and cross-contact statements.
