Recipe
Semolina swallow
A smooth wheat-based swallow, stirred over low heat and served alongside a rich soup. From Ngozi's Kitchen.

What you’ll need
Let’s get cooking
- 1
Bring the water to a boil in a heavy saucepan. Reduce the heat to low.
- 2
Sprinkle in the semolina slowly while stirring continuously to prevent lumps.
- 3
Work the mixture with a strong spoon until it comes together. Add a little hot water if it is too stiff.
- 4
Cover and steam on very low heat for 3–5 minutes, then stir thoroughly again.
- 5
Serve warm with egusi, efo riro or another soup.
A little kitchen wisdom
Check the packet directions because semolina products vary. This swallow contains wheat.
