Ebiripo (Steamed Cocoyam Parcels)
Soft grated-cocoyam puddings steamed in food-wrapping leaves and served with soup. Ebiripo shows how a very short ingredient list can carry a local food identity. Chefapella describes preparing it with egusi Ijebu and notes a salt-preference difference between Remo cooks and some Ijebu households. A Federal Polytechnic Ilaro study independently records grated cocoyam, water and leaf wrapping. Steaming lets the cocoyam set into a tender parcel rather than dissolve into a soup. Here the seasoning is restrained, leaving room for a smooth egusi Ijebu or pepper sauce at the table. Cultural context: Chefapella documents Remo and Ijebu forms, differing in salt preference. The parcels are steamed cocoyam, distinct from water-yam pottage and sauce-cooked ekpang nkukwo.

Allow 10 additional minutes for resting / soaking. Total: 90 minutes.
What you’ll need
Let’s get cooking
- 1
Wear gloves if raw cocoyam irritates your skin. Peel, rinse and finely grate the cocoyam. Never taste the raw paste.
- 2
Mix in salt if using and enough of the water to make a thick paste that drops slowly from a spoon. It should not pour like thin batter.
- 3
Wash wrappers and soften stiff banana leaves over steam. Brush lightly with palm oil. Divide paste into six broad, shallow parcels, folding twice so batter cannot escape.
- 4
Place a rack or spare leaves in a deep pot and add water below the top of the rack. Arrange parcels above the water, cover tightly and maintain steady steam for 45–50 minutes. Top up with boiling water before the pot dries.
- 5
Open one parcel carefully away from your face. The centre should be uniformly firm and steaming, with no raw wet streak. If still pasty, steam another 10 minutes and recheck.
- 6
Rest for 10 minutes, unwrap and serve with soup. Discard wrappers. Chill uneaten parcels promptly.
A little kitchen wisdom
Use identified edible cocoyam, never wild taro-like plants. Leaves are wrappers in this recipe, not edible filling. Heatproof ramekins can be used as a declared convenience alternative. Timing estimate: active preparation 30 min; cooking 50 min; additional passive time 10 min; conservative planning allowance 90 min. Some stages may overlap. Recipe status: Research formulation; not kitchen-tested. Allergen checks: No major allergen intentionally included; verify every ingredient and product label.
