Recipe
Pounded yam
A smooth, stretchy swallow made from boiled yam and served with soup. From Nnenna's Soup Corner.

What you’ll need
Let’s get cooking
- 1
Peel the yam and cut it into even chunks. Rinse and cover with water in a saucepan.
- 2
Boil until very tender, about 20–25 minutes. Reserve a cup of the hot cooking water and drain the yam.
- 3
Transfer the hot yam to a sturdy clean mortar and pound until smooth, scraping down with a spoon between rounds.
- 4
Add small splashes of hot cooking water as you pound, just until the yam becomes soft and cohesive.
- 5
Shape with a moistened spoon and serve warm with soup.
A little kitchen wisdom
