Recipe
Miyar Kubewa Danya (Northern Fresh-Okra Soup)
Finely grated fresh okra stirred into a beef, dried-fish and dawadawa broth. Kubewa names okra, and danya distinguishes fresh okra from the dried form also used in northern kitchens. Aminiya’s recipe describes a restrained meat-and-fish broth rather than a crowded ingredient list, while other northern cooks add dawadawa and a few greens. The grated vegetable supplies its own thickening, making careful water control important. This version keeps the fresh okra central and serves it with tuwo, preserving its regional name alongside the collection’s broader okra-soup entries. Cultural context: A Hausa-named fresh-okra preparation, not an assertion that every okra soup is the same regional recipe.

What you’ll need
Let’s get cooking
- 1
Put beef, half the onion, half the salt and 750 ml water in a pot. Bring to a boil, reduce heat and simmer, partly covered, for 50–65 minutes until the beef is tender. Add hot water if the pot begins to dry.
- 2
Inspect the fish for bones and grit. Rinse briefly with clean water. Grate or finely chop okra; keep it separate from raw-meat tools.
- 3
Add fish, chilli, garlic, remaining onion, dawadawa and palm oil to the beef broth. Simmer 10 minutes. Remove any newly exposed fish bones.
- 4
Adjust to about 700 ml broth around the meat; add reserved water or simmer a little longer as needed. Stir the grated okra into the gently bubbling liquid in several additions.
- 5
Cook uncovered for 5–8 minutes, stirring slowly until okra is tender and the soup pulls in soft strands. Avoid prolonged hard boiling. Taste before adding the remaining salt and serve hot with tuwo.
A little kitchen wisdom
No potash is needed in this formulation; finely cutting the okra releases its natural mucilage Fresh and dried okra are distinct preparations and should not be swapped by weight Timing estimate: active preparation 20 min; cooking 90 min; additional passive time 0 min; conservative planning allowance 110 min. Some stages may overlap. Recipe status: Research formulation; not kitchen-tested. Allergen checks: Fish
