Pocho (Tiv Pepper and Meat Sauce)
A loose, deeply savoury pepper sauce with tender goat, smoked fish and fermented seasonings. Pocho can share a plate with a separate draw soup rather than supplying every texture by itself. Tiv cooks describe pepper, meat and fermented seasonings as its centre of gravity. Pounded yam is a natural companion, although rice and other swallows also appear in published accounts. The small amount of oil here leaves the sauce fluid enough to mingle with an accompanying soup; the pepper level can be raised after the first trial. Cultural context: A Tiv pepper-led sauce; this goat-and-smoked-fish formulation is one version, with heat reduced for a home-kitchen starting point.

What you’ll need
Let’s get cooking
- 1
Put the goat, sliced half-onion, half the salt and 750 ml water in a pot. Bring to a boil, skim if needed, then cover loosely and simmer 60–75 minutes until a fork enters the meat easily. Add hot water if the pan becomes dry.
- 2
Blend the remaining onion, peppers, nune and optional gbaaye with 150 ml water. Keep a little texture; do not strain away the pepper pulp.
- 3
Stir the pepper mixture and palm oil into the tender goat and its broth. Simmer uncovered for 12–15 minutes, stirring occasionally, until the raw pepper aroma softens.
- 4
Add the cleaned fish and remaining water as needed. Simmer gently for 8–10 minutes until the fish is hot throughout. The sauce should be loose, not a dry fried stew.
- 5
Taste for salt. Serve hot alongside pounded yam and, if desired, a separately prepared okra or jute soup. Refrigerate leftovers promptly in shallow containers.
A little kitchen wisdom
Start with fewer Scotch bonnets; more can be cooked in later, but excess heat cannot be removed Ground gbaaye and locust beans are different fermented seasonings; do not treat their names as botanical synonyms Timing estimate: active preparation 20 min; cooking 100 min; additional passive time 0 min; conservative planning allowance 120 min. Some stages may overlap. Recipe status: Research formulation; not kitchen-tested. Allergen checks: Fish; Check fermented seasoning labels for soy or other added allergens
