Soft African breadfruit seeds with palm oil, smoked fish and a small handful of greens. Ukwa has both everyday and ceremonial lives in Igbo food culture. Flo Chinyere recalls it as a family comfort food and also describes it being reserved for special guests at traditional events. It may be served plainly with its broth, or enriched into porridge; this recipe follows the latter approach. Cultural context: Ukwa here means the edible seeds of African breadfruit, Treculia africana, not chunks of the unrelated large starchy breadfruit used in some other cuisines.

Sort the ukwa carefully for stones. Rinse, soak in plentiful water in the refrigerator overnight, then drain and rinse.
Put it in a pot with 1.5 litres fresh water and the baking soda, if using. Bring to a boil, reduce to a steady simmer and cook 60–90 minutes, topping up with hot water, until the seeds crush easily.
If still firm, continue cooking; age and dryness can substantially lengthen the time. Leave about 250 ml broth in the pot, reserving any excess.
Add palm oil, fish, pepper and ogiri. Simmer 10 minutes, then stir firmly to make a loose porridge.
Add ugu and cook 3–5 minutes. Season and adjust with reserved broth before serving.
Allow more time for older dried seeds; softness is the endpoint. For a plain preparation, omit enrichments and serve the cooked seeds with their broth. Timing: active preparation 15 min; cooking 100 min; additional passive time 480 min; conservative planning allowance 595 min. Some stages may overlap. For Recipe.ng display, prep_minutes includes the additional passive time; it is not all hands-on work. Recipe status: Research draft; not kitchen-tested. Allergens and checks: Fish; Check ogiri label
