Gudun Kurna (Wheat Dumplings with Pepper and Fish)
Soft boiled wheat dumplings finished with palm oil, pepper, vegetables and cooked fish. Gudun kurna is documented as a wheat-flour dumpling dish in research on wheat processing in northern Nigeria. Home cooks show more than one way to bring it to the table: dumplings may cook directly in a seasoned broth, or be boiled separately and dressed afterward. This version follows the separate-boiling method, with fish and fresh vegetables beside it. Its wheat base makes it different from dan wake, even though both can be portioned into small pieces for boiling. Cultural context: Wheat-flour dumplings are supported by northern cooks and a Nigerian wheat-sector field report; no exclusive origin is claimed.

Allow 10 additional minutes for resting / soaking. Total: 80 minutes.
What you’ll need
Let’s get cooking
- 1
Mix flour with half the salt and 210 ml lukewarm water. Knead briefly into a smooth soft dough that holds together; cover and rest for 10 minutes.
- 2
Season the fish with ginger, a little chilli and a pinch of the remaining salt. Heat 15 ml palm oil in a frying pan over medium heat. Cook fish for about 3–5 minutes per side, depending on thickness, until opaque and at least 63°C in the centre. Set aside using clean utensils.
- 3
Bring the boiling water to a steady boil in a wide pot. Pinch or cut the dough into small, flat thumb-sized pieces, no thicker than 1 cm. Drop into water in batches, stirring gently to prevent sticking.
- 4
Simmer each batch for 8–12 minutes after the water returns to a simmer. Floating alone does not prove doneness: split a dumpling and check that the centre is firm-tender without dry flour or sticky raw dough.
- 5
Drain well. Warm the remaining palm oil gently with half the onion and remaining chilli for 2 minutes, without smoking the oil. Toss through the dumplings.
- 6
Arrange with cooked fish, washed lettuce, tomatoes and remaining onion. Taste and use the last salt only if needed. Serve immediately.
A little kitchen wisdom
Small flat dumplings cook more evenly than large balls This is the dressed version; the soup-cooked variation is acknowledged but not merged into the method Timing estimate: active preparation 25 min; cooking 45 min; additional passive time 10 min; conservative planning allowance 80 min. Some stages may overlap. Recipe status: Research formulation; not kitchen-tested. Allergen checks: Wheat (gluten); Fish
