Okpa (Bambara Bean Pudding)
Warm, softly set yellow puddings with the earthy flavour of Bambara beans. Okpa is strongly associated with Enugu and roadside sellers around Ninth Mile Corner in Ngwo. Flo Chinyere describes travellers recognising the calls of vendors as they approach the area. Its main ingredient is Bambara bean flour, whose own flavour is central to the lightly seasoned version presented here. Cultural context: This restrained Enugu-associated version uses Bambara bean flour, palm oil, pepper and salt. Other households add further seasonings.

What you’ll need
Let’s get cooking
- 1
Set a rack in a large covered pot with simmering water underneath. Lightly oil six heatproof 250–300 ml ramekins; use additional smaller cups if needed.
- 2
Sift flour and salt into a bowl. Rub in the palm oil until evenly golden.
- 3
Whisk in the lukewarm water gradually, breaking up every lump. Stir in pepper. The batter should pour easily.
- 4
Divide among the ramekins, leaving at least 2 cm headroom. Cover each with foil and place on the rack. Cover the pot tightly.
- 5
Steam for 55–65 minutes, replenishing the pot with boiling water as needed. A skewer inserted in the centre should have no wet batter; extend cooking if required.
- 6
Rest 10 minutes before unmoulding or eating from the cups.
A little kitchen wisdom
Leaf wrapping is traditional; ramekins are a practical home-kitchen adaptation with a different shape. Do not substitute ordinary wheat flour or uncooked ground peanuts for okpa flour. Timing: active preparation 20 min; cooking 65 min; additional passive time 10 min; conservative planning allowance 95 min. Some stages may overlap. For Recipe.ng display, prep_minutes includes the additional passive time; it is not all hands-on work. Recipe status: Research draft; not kitchen-tested. Allergens and checks: Bambara beans are legumes; check suitability for individual legume allergies
