Apapa (Ebira Unpeeled Bean Pudding)
A dense, earthy steamed pudding made from whole beans, peppers and red palm oil. Keeping the skins on the beans is a defining feature in published descriptions of Ebira apapa. It gives the pudding a darker colour and a more substantial texture than many familiar moi moi versions. Leaf parcels are a traditional cooking form, while ramekins make the steaming step easier to control in a small kitchen. Garri or pap can accompany it. The recipe keeps the unpeeled-bean identity and makes the modern container choice explicit. Cultural context: Apapa retains the bean skins and a substantial palm-oil base; the distinction from the existing peeled-bean moi moi is documented by Ebira cooks.

Allow 360 additional minutes for resting / soaking. Total: 460 minutes.
What you’ll need
Let’s get cooking
- 1
Cover the sorted, rinsed beans with plenty of cold water and soak for 6 hours in the refrigerator. Drain and rinse, keeping the skins.
- 2
Grease six heatproof 250 ml ramekins. Fit a rack in a deep pot, add water below the rack and bring to a simmer.
- 3
Blend the beans with onion, pepper and 300 ml water, working in batches. The paste should be as smooth as your blender permits; scrape the jug between bursts.
- 4
Mix in palm oil, salt and optional crayfish. Add the reserved water gradually until the batter is thick but pours in a continuous ribbon. Divide among the cups, leaving at least 2 cm headroom, and cover each with foil.
- 5
Set the cups on the rack, cover the pot and steam steadily for 60–75 minutes. Replenish with boiling water at the side so it cannot splash into the cups. The centre must be firmly set with no wet bean batter on a skewer.
- 6
Rest 10 minutes before serving. Leaf parcels may cook differently; use cleaned cooking leaves and an experienced wrapper, never ordinary plastic bags.
A little kitchen wisdom
The skins are intentional; peeling the beans changes the stated preparation This recipe omits unstandardized potash and relies on thorough soaking, fine blending and steaming Have extra heatproof cups ready if the batter exceeds the safe fill level; do not overfill to force a fixed number of portions. Timing estimate: active preparation 25 min; cooking 75 min; additional passive time 360 min; conservative planning allowance 460 min. Some stages may overlap. Recipe status: Research formulation; not kitchen-tested. Allergen checks: Crustaceans if crayfish is used; Beans are legumes; check individual allergy needs
