Dambun Masara (Steamed Maize Grits with Greens)
Fluffy steamed maize grits tossed with moringa, groundnuts, onion and pepper. Dambu can be made from several grains, and the grain name matters. Jiddah’s Kitchen identifies tsaki as grits and describes both plain and seasoned versions; this one uses maize rather than the rice of dambu shinkafa. The steaming is interrupted so the grains can be loosened and mixed with vegetables before returning to the pot. Groundnuts add bite, while moringa gives the finished bowl green flecks. Serve it as a meal or alongside a vegetable sauce. Cultural context: Named Nigerian cooks document this maize-grit preparation; NICO’s Masarawa spelling is retained only in the source resolution.

Allow 20 additional minutes for resting / soaking. Total: 105 minutes.
What you’ll need
Let’s get cooking
- 1
Rinse the grits in several changes of water, checking for stones. Drain in a fine sieve for 20 minutes. Rub in about 60 ml of the measured water: the grains should feel evenly damp and crumbly, not float in water.
- 2
Line a steamer with clean food-safe muslin, leaving room for steam circulation. Keep the cloth away from flame. Add the grits loosely and steam over steadily boiling water for 30–40 minutes.
- 3
Meanwhile rinse moringa leaves thoroughly and simmer in a separate pan of boiling water for 5–10 minutes until tender. Drain and chop. Never use unidentified or pesticide-treated leaves.
- 4
Tip the hot grits carefully into a heatproof bowl. Break up clumps with a fork, then mix in oil, moringa, peanuts, onion, chilli, ginger, garlic and salt. Sprinkle in up to 90 ml more water if the centres remain hard.
- 5
Return to the steamer for 20–25 minutes, replenishing its boiling water without wetting the grains. Check that a few grits from the centre and edge crush easily and have no hard core; steam longer if necessary.
- 6
Fluff, taste and serve hot. Cool leftovers quickly in a shallow container and refrigerate within two hours.
