Dashishi (Steamed Cracked Wheat)
Cracked wheat steamed until light, then finished with oil, vegetables and seasoning. Dashishi makes wheat into loose grains rather than a bread or swallow. Northern cooks describe serving it with miyan taushe or another sauce, and a wheat-development field report lists it among the foods made by participating women in northern Nigeria. A simple version may contain little more than wheat, oil and salt. This vegetable variation follows the same two-stage steaming pattern, keeping the grains separate enough to carry a spoonful of soup without becoming a dense dough. Cultural context: Independent northern cooks document the name and wheat basis; not presented as a universal synonym for every burabusko.

Allow 15 additional minutes for resting / soaking. Total: 90 minutes.
What you’ll need
Let’s get cooking
- 1
Wash the cracked wheat and drain for 15 minutes. Rub in 60 ml water so all pieces are damp. Do not soak it into a batter.
- 2
Prepare a steamer lined with clean food-safe muslin. Spread wheat loosely above boiling water and cover. Steam for 25–30 minutes, keeping the bottom water at a steady simmer.
- 3
Transfer to a heatproof bowl and break up clumps. Add oil, carrot, cabbage, onion, spring onions, ginger and salt. Mix gently but thoroughly.
- 4
Taste a cooled grain. If its centre is hard, sprinkle on 60–120 ml additional water while tossing; the grain should absorb the moisture without sitting in liquid.
- 5
Steam again for 15–25 minutes until wheat and vegetables are tender. Check the water below and replenish with boiling water as needed. Fluff once more and serve hot with miyan taushe or stew.
A little kitchen wisdom
For precooked bulgur, follow its packet hydration instructions rather than this raw cracked-wheat timing Use food-safe cloth, not a repurposed plastic grain sack Timing estimate: active preparation 15 min; cooking 60 min; additional passive time 15 min; conservative planning allowance 90 min. Some stages may overlap. Recipe status: Research formulation; not kitchen-tested. Allergen checks: Wheat (gluten)
