Acha Pap (Fonio Porridge)
A gently sweet, creamy porridge of tiny fonio grains, finished with milk and served warm. Acha offers another way to make a warm breakfast bowl. Its tiny grains soften quickly, producing a porridge that is distinct from both firm tuwo acha and the savoury, vegetable-filled dish gwote. Nigerian writer Razi Brown recalls encountering acha while growing up in northern Nigeria and describes serving its pudding with foods such as akara and moi moi. Omolabake also cooks it as breakfast porridge. This simple version uses milk and a little sugar, leaving the grain’s delicate flavour easy to appreciate. Cultural context: Nigerian writers Razi Brown and Omolabake independently document acha/fonio porridge. NICO’s exact wording Pap Asha is retained in the resolution record; Asha→Acha is a probable editorial spelling correction, not an independently proven local alias. No ethnic origin is inferred from the Taraba heading.

What you’ll need
Let’s get cooking
- 1
Check the fonio for grit and rinse according to its package directions in a very fine sieve or clean muslin-lined strainer. Drain. Use commercially cleaned grain if possible; washing does not make unidentified grain safe.
- 2
Bring 700 ml water to a boil in a heavy saucepan. Stir in the fonio in a steady stream, add the salt if using, and turn the heat low.
- 3
Simmer gently for 8–10 minutes, stirring frequently and scraping the bottom so the small grains do not catch. The grain should swell, lose its opaque centre and feel completely soft.
- 4
Stir in the pasteurised milk and sugar if using. Simmer for another 3–5 minutes, stirring, until creamy and piping hot. Add the reserved water gradually if too thick; it will continue to thicken as it cools.
- 5
Spoon into bowls and serve warm. Refrigerate leftovers in shallow containers at 4°C or below within 2 hours, or within 1 hour above 32°C. Reheat thoroughly with a splash of water or milk.
A little kitchen wisdom
This is an unfermented whole-grain porridge, not a fermented ogi recipe. Unsweetened coconut milk can replace dairy milk, following Omolabake’s variation; check packaged products for allergens. The water ratio and cooking time vary with fonio processing; use the package’s longer time if required and cook until the grains are fully soft. Timing estimate: active preparation 5 min; cooking 15 min; additional passive time 0 min; conservative planning allowance 20 min. Some stages may overlap. Recipe status: Research formulation; not kitchen-tested. Allergen checks: Milk
