Ibyer (Unfermented Tiv Millet Porridge)
A warm, spoonable millet porridge with a little fresh ginger. Ibyer belongs to Tiv cereal preparations that may be made from millet, sorghum or maize. Published research distinguishes a sweet, unfermented form from a sour fermented one. The millet version here follows the straightforward flour-and-water route documented by Tiv Food Recipes. Ginger supplies the aroma, and the finished consistency can sit between a drink and a breakfast porridge. It can be served with a bean pudding or bread, with sugar and milk offered separately rather than assumed. Cultural context: The unfermented version is specified; this is not a home-fermentation instruction or a substitute name for every millet drink.

What you’ll need
Let’s get cooking
- 1
Whisk the millet flour and ginger into 300 ml cold water until no dry pockets remain. Break up lumps against the bowl with a spoon.
- 2
Bring the remaining 900 ml water to a boil in a deep saucepan. Lower the heat and pour in the slurry in a thin stream, whisking steadily.
- 3
Bring back to a gentle bubbling simmer. Cook for 10–12 minutes, stirring across the base so the flour does not settle or scorch. Add a little hot water if it thickens more than desired.
- 4
Taste only after the flour has cooked; the porridge should be smooth without a raw flour taste. Divide into bowls and add optional sugar and pasteurized milk to individual portions.
- 5
Serve hot. Refrigerate any leftovers promptly; reheat thoroughly with water while stirring. Do not leave this batch standing to ferment.
A little kitchen wisdom
A labelled commercial fermented millet product makes a different, sourer version; do not swap it silently This is a general family recipe, not a nutritionally complete infant food or medical diet Timing estimate: active preparation 5 min; cooking 15 min; additional passive time 0 min; conservative planning allowance 20 min. Some stages may overlap. Recipe status: Research formulation; not kitchen-tested. Allergen checks: Milk if used
