Gwate Acha
A savoury, spoonable fonio porridge with groundnuts, peppers and plenty of greens. Acha, also called fonio, is grown and cooked in Nigeria’s central region. Gwate is one way of combining this small grain with vegetables. Related names and preparations travel across communities, and maize versions exist too; this entry follows the acha-and-groundnut form documented by a Plateau cook. Cultural context: A regional dish shared by multiple Plateau and neighbouring communities; sources do not establish exclusive ownership by a single ethnic group.

Let’s get cooking
- 1
Check fonio carefully for grit. Rinse in a very fine sieve or wash and decant repeatedly without losing the tiny grains.
- 2
Bring water, tomatoes, bell pepper, chilli, three-quarters of the onion, groundnuts, dawadawa and salt to a boil. Simmer for 15 minutes.
- 3
Sprinkle in the fonio while stirring. Reduce heat and simmer for 8–10 minutes, stirring frequently as it thickens.
- 4
Add spinach and the remaining onion and cook for 3–5 minutes. The grain should be tender and the porridge loose enough to eat with a spoon; thin with hot water if needed.
- 5
Taste and serve hot. It thickens further on standing.
A little kitchen wisdom
Fonio products vary: follow longer package cooking guidance if needed The regional name covers several formulations; do not replace fonio with maize without adjusting cooking time This version contains no added oil Timing: active preparation 20 min; cooking 30 min; additional passive time 0 min; conservative planning allowance 50 min. Some stages may overlap. Recipe status: Research draft; not kitchen-tested. Allergens and checks: peanuts
