Very soft mashed beans with a separate dark, slow-fried dried-pepper and onion sauce.
Ewa agoyin is a familiar Lagos street meal, often paired with soft bread. Lola Osinkolu links its arrival in Nigeria with Agoyin people from Cotonou. That account supports a Beninese connection, while its popularity in Lagos demonstrates how food traditions move and become part of a new city’s everyday cooking.
Cultural context: A cross-border food tradition embedded in Lagos food culture. Its Beninese connection should not be erased by labeling it exclusively Yoruba-origin.
Cover dried peppers and chillies with the 500 ml boiling water. Leave for 2 hours until pliable, then drain. This is rehydration, not fermentation.
2
Meanwhile, put the beans and 2 litres water in a large pot. Bring to a boil and simmer partly covered for 90–140 minutes until extremely soft. Add reserved hot water whenever the level falls below the beans.
3
Add half the salt and mash the beans thoroughly. Keep enough cooking liquid to make a loose, soft mash rather than a dry paste; cover and keep warm.
4
Blend the drained peppers with the roughly chopped onion and 75 ml fresh water to a coarse paste.
5
Warm the palm oil without smoking it. Add the sliced onions and cook on medium-low for 15–20 minutes, stirring, until deep golden brown rather than black.
6
Carefully stir in the pepper paste. Cook on low for 20–30 minutes, stirring frequently, until dark red-brown, fragrant, and separated from the oil. Add the optional crayfish and remaining salt for the last 5 minutes.
7
Taste the cooked sauce, adjust seasoning, and spoon small portions over the mashed beans. Serve the extra sauce separately so diners can choose the heat.
A little kitchen wisdom
Pepper soaking can overlap with bean cooking, so elapsed time is shorter than the sum of all preparation fields.
The beans should be wetter than ordinary stewed beans because they firm up after mashing.
Unbleached oil is supported by Lola’s version; do not deliberately smoke oil.
Timing: active preparation 20 min; cooking 150 min; additional passive time 120 min; conservative planning allowance 290 min. Some stages may overlap. For Recipe.ng display, prep_minutes includes the additional passive time; it is not all hands-on work.
