Atyever (Tiv Jute-Leaf Soup)
Beaten jute leaves form a light, slippery soup with a savoury fermented-seasoning base. Jute leaves appear in several Nigerian cooking traditions, but a shared leaf does not make every preparation the same. The Tiv Food Recipes account seasons atyever with nune and gbaaye and works the leaves while they cook. Those choices are retained here. The soup can accompany a firm swallow and a more peppery sauce such as pocho. Its consistency is adjustable: a quick beating leaves visible flecks, while brief blending produces a smoother draw. Cultural context: A Tiv jute preparation seasoned with both nune and gbaaye; kept separate from the existing Yoruba ewedu entry.

What you’ll need
Let’s get cooking
- 1
Pick out tough stems and damaged leaves. Wash the jute in several changes of clean water, lifting it out each time so sand remains at the bottom.
- 2
Bring 550 ml water to a boil. Add the leaves in batches and cook for 3–4 minutes, turning them into the water until softened.
- 3
Lower the heat. Beat the leaves with a clean whisk or use a hand blender in short bursts with the head fully submerged. Take care with the hot liquid.
- 4
Stir in ground nune, gbaaye, crushed pepper and salt. Simmer gently for 6–8 minutes, then add the whole nune and enough of the reserved water for a soft drawing consistency.
- 5
Heat for 2 minutes more and serve promptly with a swallow. For later use, cool rapidly in a shallow container and refrigerate.
A little kitchen wisdom
No alkali is needed for tender, well-beaten jute; do not substitute cleaning soda for a culinary ingredient Frozen plain jute can be used, but thawing liquid and leaf maturity change the water needed Timing estimate: active preparation 20 min; cooking 15 min; additional passive time 0 min; conservative planning allowance 35 min. Some stages may overlap. Recipe status: Research formulation; not kitchen-tested. Allergen checks: Check fermented seasonings for soy and other added allergens
