Recipe
Agbugbu / Fio Fio with Yam
Tender pigeon peas and yam folded through palm oil, onion, pepper and fermented oil bean. Agbugbu and fio fio name the pigeon peas that anchor this Enugu-associated meal. They require patient cooking before the yam and palm-oil seasoning can come together. Nigerian writers document both yam and dried-cocoyam companions; the latter already appears in the existing Recipe.ng collection as achicha. Here the yam stays in soft, irregular pieces, with onion and ugba threaded through the peas. It is a useful reminder that one local ingredient can support several distinct meals, rather than serving as a single interchangeable label for them all. Cultural context: Agbugbu names pigeon peas; this is a documented yam-and-pigeon-pea preparation. Achicha is a related but different accompaniment.

Allow 480 additional minutes for resting / soaking. Total: 670 minutes.
What you’ll need
Let’s get cooking
- 1
Sort and rinse the peas. Cover generously with water and soak 8 hours in the refrigerator. Drain and rinse.
- 2
Put peas in a large pot with 2 litres fresh water. Bring to a full boil, then simmer partly covered for 90–120 minutes or longer, topping up as needed, until a pea crushes easily with no hard centre.
- 3
Add yam and half the salt, with enough remaining water to cover. Simmer 20–25 minutes until the yam is tender throughout. Drain, keeping 250 ml cooking liquid, and break some yam pieces lightly with a spoon.
- 4
Warm palm oil gently in a wide pot without smoking it. Soften onion for 3 minutes; add pepper, optional crayfish, uziza and stock cube. Cook 3 minutes, then stir in ugba and heat thoroughly.
- 5
Fold in peas and yam. Add reserved liquid a spoonful at a time to moisten, then cook gently for 5 minutes. Adjust salt and serve hot as a complete dish.
A little kitchen wisdom
Do not replace pigeon peas with akidi simply because both are pulses. Older peas may take appreciably longer; tenderness, not the clock, determines readiness. Timing estimate: active preparation 25 min; cooking 165 min; additional passive time 480 min; conservative planning allowance 670 min. Some stages may overlap. Recipe status: Research formulation; not kitchen-tested. Allergen checks: Crustaceans if crayfish is used; Check stock cube and ugba labels
