Recipe
Nigerian tomato stew
A thick tomato and pepper sauce that works with rice, boiled yam or eggs. From Ada's Family Table.

What you’ll need
Let’s get cooking
- 1
Blend the tomatoes, peppers, scotch bonnet and one onion. Slice the other onion.
- 2
Pour the blend into a saucepan and simmer uncovered for 15 minutes to reduce excess water.
- 3
In a separate heavy pot, warm the oil and soften the sliced onion. Stir in the tomato paste and cook for 3 minutes.
- 4
Add the reduced tomato mixture carefully. Cook for 15–20 minutes, stirring often, until the sauce thickens.
- 5
Add stock, thyme and salt. Simmer for 8 minutes, then taste and serve.
A little kitchen wisdom
Let the tomato base reduce before adding stock. The sauce should coat a spoon rather than run off like water.
