Madidi (Millet Set Pudding)
A softly set millet pudding prepared from a commercial millet-ogi product. Madidi names a cereal gel rather than a single grain everywhere it is eaten. Accounts of Alago cooking in Nasarawa describe millet, leaf wrapping and service with soup or bean foods. A history study of Doma also records its role in local food livelihoods. This version keeps millet as the identifying grain and uses a prepared ogi product so that the recipe begins after commercial grain processing. It is distinct from the existing mild cornstarch-based eko formulation. Cultural context: The millet form is specified. Madidi is associated with Alago foodways and also occurs in other communities and with other grains.

Allow 45 additional minutes for resting / soaking. Total: 85 minutes.
What you’ll need
Let’s get cooking
- 1
Wet six small heatproof bowls. Whisk the millet ogi powder into 300 ml cool water until completely smooth.
- 2
Bring the remaining 700 ml water to a boil in a heavy pot. Lower the heat and pour in the slurry while stirring continuously with a sturdy spoon.
- 3
Cook over medium-low heat for 15–20 minutes, scraping the base and sides. It should become a smooth thick gel, and a cooled sample should hold a soft mound. Follow any longer cooking requirement on the product label.
- 4
If too stiff to work before the flour cooks through, beat in hot water a tablespoon at a time. Cover on very low heat for 5 minutes, then stir thoroughly for another 2 minutes.
- 5
Divide into the wetted bowls. Let steam escape briefly, then refrigerate promptly if not serving immediately. Allow about 45 minutes to set; chill longer if necessary.
- 6
Serve with a hot soup or a bean dish. Keep chilled until needed and do not regard leaf wrapping as a method of safe long-term room-temperature storage.
A little kitchen wisdom
This prepared-ogi route needs testing for each brand because flour processing changes thickening strength Madidi can be made from other grains, but changing the grain changes this record’s stated variant Timing estimate: active preparation 10 min; cooking 30 min; additional passive time 45 min; conservative planning allowance 85 min. Some stages may overlap. Recipe status: Research formulation; not kitchen-tested. Allergen checks: No major allergen intentionally included; check processed-product labels
