Burabusko (Steamed Millet Couscous)
Tender steamed millet grits, loosened with oil and served as a grain accompaniment to soup or stew. The tiny grains of burabusko are made to welcome soup. Nigerian cook Maimunat Jafar Umar describes biskin gero as a favourite in her family from Maiduguri, while Aisha BG Kyari names millet and rice forms in her Kanuri food tradition. This recipe keeps the millet separate from its sauce so its gently nutty flavour remains clear. Coarse grits matter: flour would make a paste, while whole grains would need different cooking. A final fluffing leaves a soft, granular accompaniment ready for a ladle of stew. Cultural context: Aisha BG Kyari identifies millet or rice brabusko with her Kanuri food tradition; HarvestPlus Solutions separately labels its millet version Biski/Burabusko Hausa. These overlapping associations do not establish exclusive ownership. NICO’s Burshusko is interpreted through those independently documented spellings and its Borno grain-staple context.

Allow 10 additional minutes for resting / soaking. Total: 75 minutes.
What you’ll need
Let’s get cooking
- 1
Pick over the grits for stones, rinse quickly in a fine sieve and drain thoroughly. Sprinkle with 150 ml of the measured moistening water, toss with a fork and leave for 10 minutes. Break up any clumps.
- 2
Bring the steamer water to a simmer. Line the basket with a clean, food-safe steaming cloth and spread the damp grits loosely inside, leaving room for steam to pass. Keep all cloth away from flame and do not block a pressure valve.
- 3
Cover and steam for 20–25 minutes, counting from when steam rises through the grain. Keep the basket above the water, topping up the lower pot with boiling water if necessary.
- 4
Carefully tip the hot grits into a heatproof bowl. Fluff with a fork, add the oil and salt, then sprinkle in 150 ml hot water. Toss gently so dampness is evenly distributed; do not handle hot grain with bare hands.
- 5
Transfer to a heavy saucepan, cover and cook on the lowest heat for 15–20 minutes, stirring once or twice. Add some of the remaining 150 ml hot water in small amounts if grains are still firm. They should be fully tender without a hard centre and remain granular rather than runny.
- 6
Fluff and serve hot with a cooked soup or stew. Refrigerate leftovers in shallow containers at 4°C or below within 2 hours, or 1 hour above 32°C; reheat until steaming throughout.
A little kitchen wisdom
Use packaged millet grits to avoid improvised sun-drying. Grain size changes water absorption. Add finishing water gradually rather than flooding the pot. Baobab-leaf soup, sorrel soup and pumpkin soup are documented accompaniments; check each for peanut, fish or shellfish allergens. Timing estimate: active preparation 10 min; cooking 55 min; additional passive time 10 min; conservative planning allowance 75 min. Some stages may overlap. Recipe status: Research formulation; not kitchen-tested. Allergen checks: No major allergen intentionally included; verify every ingredient and product label.
