Whole ripe plantains roasted until tender and browned, served with crunchy roasted groundnuts. Boli and groundnuts form a recognizable Nigerian street-food pairing. Other versions accompany roasted plantain with fish and pepper sauce. Nigerian writers describe both ripe and unripe plantains being roasted; ripeness changes the result from firm and starchy to sweeter and softer. This recipe chooses firm-ripe plantains for a straightforward oven preparation. Cultural context: Roasted plantain is shared across southern Nigerian communities. This simple plantain-and-groundnut pairing is not a complete Port Harcourt fish-and-sauce plate.

Cut the ends from the plantains, slit only the skin lengthwise, and peel. Leave the plantains whole.
Arrange with space between them and roast for 15 minutes. Turn gently and continue roasting for 15–20 minutes.
Check the thickest part with a skewer: it should slide through easily. The surface should be browned in patches while the centre is completely tender. Cook larger plantains longer if needed.
Serve warm with the roasted groundnuts alongside, one plantain and about 30 g groundnuts per portion.
An oven gives browning without the smoky flavor of a charcoal grill. Very soft overripe plantains are fragile; use a tray rather than a rack if that is what you have. Timing: active preparation 10 min; cooking 35 min; additional passive time 0 min; conservative planning allowance 45 min. Some stages may overlap. Recipe status: Research draft; not kitchen-tested.
