Thin fried cornmeal sticks with a crisp bite and a little ginger and chilli. Kokoro is sold as a crunchy rod-shaped snack in southwestern Nigeria. NICO lists it among Osun foods, while Ozoz Sokoh describes long, slender sticks sold on Lagos Island. Recipes vary in shape, spice, and starch mixture; this version uses maize alone and keeps the seasoning simple. Cultural context: A Yoruba-associated maize snack; this all-maize version is distinct from groundnut kulikuli and fermented rice masa.

Allow 25 additional minutes for resting / soaking. Total: 90 minutes.
Mix one 125 g portion of maize meal with sugar, salt, ginger, and optional pepper. Bring the 300 ml water to a boil in a small saucepan.
Lower the heat and stir in the seasoned meal gradually. Cook for 4–6 minutes, stirring firmly, until it forms a thick cohesive paste without dry pockets.
Transfer to a bowl, cover, and cool for about 20–25 minutes until safe to handle. Knead in the remaining 125 g maize meal gradually.
The dough should be firm but roll without crumbling. Add a little reserved warm water if it cracks, or a dusting of the extra meal if it is sticky.
Pinch off small pieces and roll into slender sticks around 8–10 cm long and no thicker than 8 mm. Keep the unshaped dough covered so it does not dry out.
Heat oil to around 170°C in a deep pan, below half full. Fry a few sticks first for 4–6 minutes, moving them gently, until golden and firm.
Cool a test stick fully and check that it snaps rather than bending with a damp centre. Make subsequent sticks thinner or fry slightly longer if needed. Fry the remaining dough in small batches and cool completely before serving.
Yield is approximately 50–60 slender sticks; size and meal texture affect the count. Maize meal brands vary greatly in water absorption, so the shaping cue is more reliable than forcing in all extra flour or water. Kokoro firms as it cools. Timing: active preparation 35 min; cooking 30 min; additional passive time 25 min; conservative planning allowance 90 min. Some stages may overlap. For Recipe.ng display, prep_minutes includes the additional passive time; it is not all hands-on work. Recipe status: Research draft; not kitchen-tested. Allergens and checks: None specifically listed; verify every ingredient and product label.
