Long-grain rice finished in palm-fruit broth with smoked fish, crayfish and scent leaves. Banga rice carries palm fruit into the rice pot itself. Flo Chinyere documents a version made with canned palm-fruit concentrate, while Tilda credits a Nigerian cook and notes the dish’s Urhobo association. Some recipes add the spice blend used for banga soup; others rely on onion, peppers, crayfish and scent leaves. This version takes the latter path. Its identity lies in the palm-fruit cooking liquid, not in simply pouring finished soup over white rice, and the final rest helps the grains absorb the broth evenly. Cultural context: Associated with Urhobo and other southern Nigerian cooking; recipes vary in whether banga-soup spices are added. This version lets palm fruit, fish and scent leaf lead.

Allow 5 additional minutes for resting / soaking. Total: 70 minutes.
Rinse rice. Boil in a large pot of water for 8–10 minutes, until the surface has softened but the centre remains firm. Drain, rinse briefly and drain thoroughly.
Mix palm-fruit concentrate with 800 ml hot water. If sediment is visible, let it settle, then carefully pour the smooth liquid into a heavy pot, leaving grit behind.
Add onion, crayfish, optional stock cube, pepper and half the salt. Bring to a simmer and cook 5 minutes.
Add drained rice and stir once. The liquid should reach roughly the rice level. Cover tightly, reduce heat and cook 15–20 minutes. Add small splashes of reserved water only if grains remain hard and the pan is drying.
Lay smoked fish and scent leaves over the rice. Cover for 5–8 minutes until the rice is tender and fish thoroughly hot. Fold carefully, adjust salt and rest off the heat for 5 minutes before serving.
Concentrate brands and rice types absorb differently; water is a starting allowance. Use a proper lid, never a plastic shopping bag, to hold in steam. Timing estimate: active preparation 20 min; cooking 45 min; additional passive time 5 min; conservative planning allowance 70 min. Some stages may overlap.
