Fluffy broken rice steamed with groundnuts, onion, pepper and moringa leaves. Dambu shows another side of northern grain cookery: grains are steamed rather than turned into a swallow. The rice version is called dambun shinkafa. It may be plain with soup or enriched with vegetables and groundnuts, as in this substantial all-in-one version. Cultural context: A Hausa-associated steamed-grain dish; dambu can also use maize, millet or other grains.

Rinse rice grits in a fine sieve, cover with fresh water for 30 minutes, then drain. Bring the steamer water to a boil.
Line a steamer basket with a clean, damp, food-safe cloth, leaving space for steam to circulate. Put in the rice and steam, covered, for 20 minutes.
Tip into a heatproof bowl. Break up clumps with a fork and mix in groundnuts, moringa, onion, chilli, salt and 2 tablespoons oil. Sprinkle over 100 ml moistening water.
Return to the steamer for 25–35 minutes. Halfway through, loosen the grains and sprinkle with more measured water if dry. Keep boiling water below the basket, never touching the food.
When both rice and nuts are tender, fold in spring onion and steam 3 minutes more. Fluff with the remaining oil and serve.
Tie loose cloth edges away from the heat source Use tender moringa; tougher leaves need separate pre-cooking Spinach is a practical substitute, although the flavour changes Timing: active preparation 20 min; cooking 60 min; additional passive time 30 min; conservative planning allowance 110 min. Some stages may overlap. For Recipe.ng display, prep_minutes includes the additional passive time; it is not all hands-on work. Recipe status: Research draft; not kitchen-tested.
