Recipe
Kunun Gyada
Warm peanut milk thickened with rice and sharpened with a little tamarind. Groundnuts need not become a savoury soup. Kunun gyada turns them into a milky gruel, with rice giving it a light porridge texture. Nigerian recipe collections place it among northern foods and serve it warm, on its own or alongside bean fritters. Cultural context: A northern groundnut-and-cereal drink or light porridge; this version uses rice and tamarind.

Allow 480 additional minutes for resting / soaking. Total: 520 minutes.
What you’ll need
Let’s get cooking
- 1
Soak rice in ample water in the refrigerator for 8 hours. Soak groundnuts separately in the refrigerator for the final 3 hours. Drain and rinse both.
- 2
Soak tamarind in 50 ml of the measured water, warmed. Press through a fine sieve and discard fibres.
- 3
Blend groundnuts with 700 ml water. Strain through a clean food-safe cloth into a saucepan, pressing out the milk. Blend rice very finely with 250 ml water.
- 4
Heat the groundnut milk slowly, stirring. Once gently boiling, pour in the rice mixture in a thin stream while whisking.
- 5
Simmer gently for 10–15 minutes, stirring often, until smooth and cooked rather than gritty. Stir in tamarind gradually to taste and sugar if using; heat for another minute.
- 6
Serve warm. Add a little hot drinking water if a thinner consistency is preferred.
A little kitchen wisdom

Some stages may overlap. For Recipe.ng display, prep_minutes includes the additional passive time; it is not all hands-on work. Recipe status: Research draft; not kitchen-tested.
